    Roasted Sausages with Peppers and Onions and Potatoes

    Roasted Sausages with Peppers and Onions and Potatoes

    A hearty, flavor-packed one-pan meal! Juicy sausages, caramelized onions, sweet bell peppers, and golden-roasted potatoes make this a perfect family dinner.

    Ingredients:

    2 tablespoons olive oil

    2 large onions, sliced into wedges

    2 red bell peppers, deseeded and cut into large chunks

    2 garlic cloves, chopped

    1 tablespoon fresh thyme leaves, chopped

    500g (1 lb 2 oz) baby new potatoes, halved

    12 sausages, pricked with a fork

    Salt and freshly ground black pepper, to taste

    Directions:

    Preheat the Oven:
    Preheat your oven to 220°C (200°C fan) or Gas Mark 7.

    Prepare the Ingredients:

    In a large resealable freezer bag or bowl, combine the onions, red bell peppers, garlic, thyme, potatoes, and sausages.

    Drizzle with olive oil, seal the bag (or mix in a bowl), and toss to coat everything evenly.

    Spread the mixture onto a large roasting tin in an even layer, making sure the sausages are not buried under the vegetables.

    Season generously with salt and freshly ground black pepper.

    Roast:

    Place the tray in the oven and roast for 30-35 minutes, or until the sausages and vegetables start turning golden.

    Halfway through, flip the sausages and toss the vegetables in the flavorful juices.

    Finish Roasting:

    Continue roasting for another 20 minutes, until the sausages are browned, the peppers are soft, and the potatoes are crispy on the outside yet tender inside.

    Serve & Enjoy:

    Serve hot with a side of mustard, crusty bread, or a fresh green salad.

    Perfect for a cozy fall dinner or an easy family meal.

    Cooking Time: 55 minutes
    Total Time: 1 hour 5 minutes
    Calories: ~450 kcal per serving
