    Roasted Italian Sweet Potato Soup

     

    Roasted Italian Sweet Potato Soup

     

    Warm up with this Roasted Italian Sweet Potato Soup, a perfect blend of natural sweetness and savory Italian herbs. Roasted sweet potatoes add a caramelized depth, while coconut milk or cream gives it a luscious, creamy texture. This hearty soup is easy to make, gluten-free, and offers a vegan-friendly option. Ideal for cozy dinners or meal prepping, it’s a bowl of comfort bursting with flavor. Garnish with roasted wedges and fresh thyme for an elegant touch!

    Ingredients:

    3 large sweet potatoes (~600 g), peeled and cut into wedges

    2 tbsp olive oil (plus extra for roasting)

    1 medium onion (~150 g), diced

    2 cloves garlic, minced

    1 tsp dried thyme (plus extra sprigs for garnish)

    1 tsp dried rosemary

    1 tsp dried basil

    4 cups vegetable broth (1 liter)

    1 cup coconut milk or heavy cream (240 ml)

    Salt and pepper to taste

    Instructions:

    1. Roast the Sweet Potatoes

    Preheat your oven to 400°F (200°C).

    Arrange sweet potato wedges on a baking sheet, drizzle with olive oil, and season with salt and pepper.

    Roast for 25-30 minutes until tender and caramelized. Reserve a few wedges for garnish.

    2. Sauté Aromatics

    Heat 2 tbsp olive oil in a large pot over medium heat.

    Add diced onion and cook until softened, about 5 minutes.

    Stir in garlic, thyme, rosemary, and basil; cook for 1-2 minutes until fragrant.

    3. Combine and Simmer

    Add the roasted sweet potatoes to the pot along with the vegetable broth.

    Bring to a boil, then reduce heat and simmer for 10-15 minutes to meld flavors.

    4. Blend to Perfection

    Use an immersion blender to puree the soup until creamy. Alternatively, blend in batches in a regular blender.

    Stir in coconut milk or heavy cream and heat for 5 minutes. Adjust salt and pepper to taste.

    5. Serve and Garnish

    Ladle the soup into bowls. Top with reserved sweet potato wedges and fresh thyme sprigs for an elegant finish.

    Recipe Notes:

    Add a pinch of red pepper flakes for a spicy kick or a drizzle of balsamic vinegar for extra depth.

    This soup is naturally sweet and pairs wonderfully with the earthy notes of Italian herbs.
