Roasted Garlic Cheddar Cauliflower Soup

1 large head of cauliflower, chopped
1 whole head of garlic
2 tbsp olive oil
1 medium onion, diced
3 cups vegetable broth (or chicken broth for extra richness)
1 cup shredded sharp cheddar cheese
Salt & black pepper, to taste
Fresh parsley, for garnish (optional)
Instructions:
1. Roast the veggies Preheat oven to 400°F (200°C). Place chopped cauliflower and whole garlic head on a baking sheet. Drizzle with olive oil, season lightly with salt and pepper, and roast for about 30 minutes until golden and tender.
