Ingredients:

1 lb baby carrots, peeled
2 tbsp olive oil
Salt and freshly ground black pepper, to taste
½ cup whole-milk ricotta cheese
1 tbsp honey
1 tsp hot sauce (adjust heat to taste)
Fresh parsley for garnish (optional)

Instructions:

1. Preheat your oven to 400°F (200°C).

2. In a bowl, toss baby carrots with olive oil, salt, and pepper.

3. Spread the carrots evenly on a parchment-lined baking sheet.

4. Roast for 25-30 minutes, turning halfway, until tender and caramelized.

5. Meanwhile, whip the ricotta cheese until smooth and fluffy using a hand mixer or whisk.
