    Refreshing Southern Pineapple Orange Swirl Cheesecake Recipe

    Ingredients
    – 1 1/2 cups graham cracker crumbs
    – 1/4 cup sugar
    – 1/2 cup unsalted butter, melted
    – 2 cups cream cheese, softened
    – 1 cup sugar
    – 1 teaspoon vanilla extract
    – 3 large eggs
    – 1 cup crushed pineapple, drained
    – 1/2 cup orange juice
    – 1/4 cup heavy cream
    – Orange and yellow food coloring (optional)
    – Pineapple slices, for garnish
    – Orange slices, for garnish
    – Whipped cream, for garnish
    – Mint leaves, for garnish

    Directions
    1. **Preheat Oven:** Set your oven to 325°F (160°C).
    2. **Prepare Crust:** In a medium bowl, mix graham cracker crumbs, 1/4 cup sugar, and melted butter. Press this mixture into the bottom of a 9-inch springform pan.
    3. **Make Cheesecake Filling:** In a large bowl, beat the softened cream cheese and 1 cup sugar until smooth. Add vanilla extract and mix well.
    4. **Add Eggs:** Beat in the eggs one at a time, ensuring each is well incorporated before adding the next.
    5. **Combine Ingredients:** Mix in the crushed pineapple, orange juice, and heavy cream until everything is thoroughly combined.
    6. **Arrange Pineapple Slices:** Place pineapple slices in a single layer over the graham cracker crust.
    7. **Color and Swirl:** Divide the batter into two bowls. Add orange food coloring to one bowl and yellow food coloring to the other, if desired. Pour the yellow batter over the pineapple slices, then pour the orange batter on top. Use a knife to gently swirl the two batters together for a marbled effect.
    8. **Bake:** Bake in the preheated oven for 50-60 minutes, or until the center is set. Allow the cheesecake to cool completely, then refrigerate for at least 4 hours or overnight.
    9. **Garnish and Serve:** Before serving, garnish with pineapple slices, orange slices, whipped cream, and mint leaves.
