Ingredients:
2 tablespoons olive oil
1 chopped onion
2 crushed garlic cloves
450g cooked and shredded chicken
1 cup tomato sauce
1 cup cream cheese (200g)
Salt, black pepper, and chopped parsley to taste
500g peeled potatoes
Olive oil for greasing
400g grated provolone cheese for sprinkling
Preparation:
1. In a pan, over medium heat, heat the olive oil and fry the onion and garlic for 4 minutes.
2. Add the shredded chicken, tomato sauce, and sauté for 3 minutes.
3. Stir in the cream cheese , season with salt, black pepper, and chopped parsley, and mix until combined.
4. Slice the potatoes using a mandolin and soak them in water until ready to use.
5. In a greased medium casserole dish, alternate layers of the chicken stew, sliced potatoes, and cheese, finishing with a generous layer of grated provolone cheese.
