Pineapple Chicken and Rice recipe:
Ingredients:
– 1 lb chicken breast, cubed
– 1 cup pineapple, cubed
– 1 tbsp olive oil
– 1 onion, chopped
– 2 cloves garlic, minced
– 1 red bell pepper, diced
– 1 cup jasmine rice
– 2 cups chicken broth
– 1 tbsp soy sauce
– 1 tsp grated ginger
– Salt and pepper, to taste
– 1/4 cup green onions, sliced
– 1 tbsp sesame seeds
Instructions:
1. Heat olive oil in a large skillet over medium heat. Add chicken cubes and cook until golden brown and fully cooked. Remove chicken and set aside.
2. In the same skillet, add onion, garlic, and red bell pepper. Sauté until vegetables are softened.
3. Add pineapple and cook for an additional 2 minutes.
4. Stir in jasmine rice, chicken broth, soy sauce, ginger, salt, and pepper. Bring to a boil.
5. Reduce heat to low, cover, and simmer for 18-20 minutes, or until rice is cooked through.
6. Return cooked chicken to the skillet, mix well, and heat through.
7. Serve garnished with sliced green onions and sesame seeds.
