    Packed Arugula Salad with Avocado and Cannellini Beans

     

     

    This Nourishing Protein-Packed Arugula Salad is a quick and satisfying meal that’s perfect for a healthy lifestyle. With a base of fresh arugula, it’s loaded with creamy avocado, protein-rich cannellini beans, and hard-boiled eggs for a complete, balanced dish. Sweet cherry tomatoes and kalamata olives add a burst of flavor, while a simple lemon and olive oil dressing ties it all together. This salad is not only delicious but also a refreshing option for a light lunch or dinner. Easy to prepare and full of nutrients, it’s sure to become a favorite in your recipe rotation!

    Ingredients:

    – 4 cups fresh arugula
    – 1 ripe avocado, sliced
    – 1 can (15 oz) cannellini beans, drained and rinsed
    – 2 hard-boiled eggs, sliced
    – 1 cup cherry tomatoes, halved
    – 1/2 cup kalamata olives, pitted and halved
    – 1/4 red onion, thinly sliced
    – 2 tbsp extra virgin olive oil
    – 1 tbsp fresh lemon juice
