    One-Pan Roasted Chicken Drumsticks with Vegetables

    Looking for a simple roasted chicken drumstick recipe that’s packed with flavor and minimal cleanup? This one-pan chicken and vegetable dinner is your new go-to for busy weeknights or hearty weekend meals. Juicy oven-roasted drumsticks, tender potatoes, and sweet carrots come together with herbs and spices for a healthy, wholesome family dinner.

    Cook Time: 50 minutes

    Calories: Moderate (varies by portion)

    Ingredients:

    8 chicken drumsticks

    3–4 potatoes, chunky cut

    3 carrots, thick slices

    1 onion, chopped (optional)

    3 tbsp olive oil

    1 tsp garlic powder

    1 tsp paprika

    ½ tsp black pepper

    1 tsp salt

    1 tsp Italian seasoning or mixed dried herbs

    Fresh parsley for garnish

    Instructions:

    1. Preheat your oven to 400°F (200°C).
    2. In a large bowl, toss chicken drumsticks, potatoes, carrots, and onion (if using) with olive oil and all seasonings until well coated.
    3. Spread everything in a single layer on a large baking sheet or roasting pan.
    4. Roast for 45–50 minutes, flipping the chicken halfway through, until the drumsticks are golden-brown and fully cooked (internal temp should be 165°F/74°C).
    5. Vegetables should be fork-tender and slightly caramelized.
    6. Garnish with chopped parsley and serve hot.

    Tips for Success:

    Add bell peppers or sweet potatoes for extra flavor and color

    Serve with crusty bread or a fresh green salad for a complete meal
