    This Potato and Pepper Sausage Bake is a flavorful and hearty one-pan meal that’s perfect for busy weeknights. Juicy smoked sausage, crispy baby potatoes, and vibrant bell peppers come together with a blend of smoky paprika and Italian herbs. It’s quick to prepare, with minimal cleanup, and delivers a satisfying, wholesome dinner. The caramelized sausage and tender, golden potatoes make it an irresistible comfort food. Garnished with fresh parsley, it’s a family-favorite dish you’ll make on repeat!

    Ingredients:

    1 pound (450g) smoked sausage or Italian sausage, sliced into rounds

    1 pound (450g) baby potatoes, halved or diced if larger

    1 red bell pepper, sliced

    1 yellow bell pepper, sliced

    1 green bell pepper, sliced

    1 medium onion, sliced

    3 cloves garlic, minced

    3 tablespoons olive oil

    1 teaspoon smoked paprika

    1 teaspoon Italian seasoning

    1/2 teaspoon garlic powder

    Salt and pepper to taste

    Fresh parsley, chopped (for garnish)

    Directions:

    Step 1: Preheat the Oven

    Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or lightly grease it.

    Step 2: Prep the Veggies

    In a large bowl, combine the baby potatoes, bell peppers, onion, and garlic. Drizzle with olive oil, and season with smoked paprika, Italian seasoning, garlic powder, salt, and pepper. Toss until everything is evenly coated.

    Step 3: Add the Sausage

    Add the sliced smoked sausage to the vegetable mixture. Stir everything to combine.

    Step 4: Arrange on the Baking Sheet

    Spread the sausage and veggie mixture in a single layer on the baking sheet. Place potatoes cut-side down for extra crispiness.

    Step 5: Bake to Perfection

    Bake for 30-35 minutes, stirring halfway through. Cook until the potatoes are golden and tender, and the sausage is caramelized.
