    – 1 tablespoon olive oil
    – ½ pound shredded cooked chicken (rotisserie chicken recommended)
    – 1 ounce taco seasoning
    – ½ cup diced onion
    – 14.5 ounces diced tomatoes, fully drained
    – 4.5 ounces diced green chiles, fully drained
    – 10 hard taco shells (Old El Paso Stand ‘N Stuff recommended)
    – 8 ounces refried beans
    – 2 cups shredded Mexican blend cheese
    – Sliced jalapeños (for topping)
    – Sour cream (for topping)
    – Salsa (for topping)
    – Shredded lettuce (for topping)
    – Chopped fresh cilantro (for topping)

    Directions:

    1. Preheat the Oven: Get ready for flavor sensation by preheating your oven to 400°F (204°C). Spray a 9×13-inch baking dish with nonstick spray for easy cleanup.

    2. Cook the Onion and Chicken Mixture: In a medium skillet over medium heat, heat olive oil. Sauté diced onion for 2-3 minutes until translucent and fragrant. Add shredded chicken, taco seasoning, drained diced tomatoes, and drained green chiles. Mix well and simmer for 5-8 minutes to let the flavors meld.

    3. Prepare Taco Shells: Stand the taco shells upright in the prepared baking dish, fitting snugly to hold 10 shells. Bake in the preheated oven for 5 minutes to slightly crisp them up.

    4. Assemble the Tacos: Spoon 1 tablespoon of refried beans into each taco shell. Top generously with the chicken mixture, filling almost to the top. Sprinkle shredded cheese over each taco.

    5. Bake the Tacos: Return the baking dish to the oven and bake for 7-10 minutes until the cheese is melted and the edges of the taco shells are golden brown.
