    Mini Strawberry Cheesecake Tacos

    Crispy, creamy, and irresistibly sweet! These Mini Strawberry Cheesecake Tacos combine crunchy graham-dusted tortilla shells with a luscious cream cheese filling and a homemade strawberry topping. Perfect for parties, holidays, or any time you crave bite-sized dessert magic!

    Ingredients:

    For the Taco Shells:
    5 (8-inch) flour tortillas (about 20 rounds)
    1 cup graham cracker crumbs
    ¼ cup melted butter
    For the Strawberry Topping:
    1 cup strawberries, chopped
    ¼ cup sugar
    2 teaspoons water
    1 tablespoon cornstarch
    1 tablespoon cold water
    For the Cheesecake Filling:
    1 cup heavy cream
    1 cup cream cheese, softened
    ¼ cup powdered sugar
    1 teaspoon lemon zest
    1 teaspoon vanilla extract

    Instructions:

     

    Preheat your oven to 400°F (200°C).
    Cut 4–5 small rounds from each tortilla using a cookie cutter (you’ll get around 20 rounds).
    Dip each tortilla round into melted butter, then coat in graham cracker crumbs.
    Flip a muffin tin upside down and place the coated tortilla rounds between the cups to form taco shapes.
    Bake for 10 minutes, or until golden brown and crisp. Let them cool completely in the pan.

    In a small saucepan, combine strawberries, sugar, and water. Bring to a boil, then reduce heat to simmer until the strawberries soften.
    Dissolve cornstarch in cold water and stir it into the strawberry mixture.
    Cook until thickened, stirring constantly, then remove from heat and let cool completely.

    In a large bowl, beat together cream cheese, heavy cream, powdered sugar, lemon zest, and vanilla using medium speed for about 2 minutes or until fluffy and thick.
    Chill the mixture in the refrigerator for 30 minutes before using.

    Transfer the cheesecake filling to a piping bag and fill each cooled taco shell generously.
    Spoon about ½ teaspoon of strawberry filling over the top of each.
    Sprinkle with extra graham cracker crumbs if desired.

    Tips & Variations:

    Swap strawberries for blueberries, raspberries, or cherries for a fruity twist!
    Drizzle with melted white chocolate for an extra touch of indulgence.
    Best served chilled for a refreshing bite!
