Ingredients:

1 lb ground turkey or ground beef
1/3 cup breadcrumbs or oatmeal (for a healthier twist)
1/3 cup grated Parmesan cheese
1 large egg
1 (8 oz) can tomato sauce (or substitute with ketchup – about 1/4 cup in the mix and 1/4 cup for topping)
1/2 tsp garlic powder
Salt & pepper to taste
1 tsp Worcestershire sauce
1–2 handfuls of finely chopped veggies (onions, mushrooms, zucchini, carrots, spinach, or lentils)

Instructions:

Preheat oven to 350°F (175°C).
In a large bowl, combine all ingredients, using only about ¼ of the tomato sauce or ketchup in the meat mixture.
Spoon the mixture evenly into a muffin pan, filling each cup about ¾ full (makes 8–10 mini meatloaves).
Top each with a small dollop of ketchup or tomato sauce.
Bake for 30–35 minutes, or until cooked through and golden brown.
Serve warm two meatloaf muffins per person make the perfect serving!
