Mexican Tater Tot Casserole

Ingredients:
– 1 pound ground beef
– 1 small onion, chopped
– 1 clove garlic, minced
– 1 packet taco seasoning
– 1 cup corn (frozen or canned)
– 1 can black beans, drained and rinsed
– 1 cup salsa
– 1 cup shredded cheddar cheese
– 1/2 cup sour cream (optional)
– 4 cups frozen tater tots
Directions:
1. Preheat your oven to 375°F (190°C).
2. In a large skillet, brown the ground beef over medium heat, then drain any excess fat.
3. Add the onion and garlic, cooking until the onion becomes translucent.
4. Mix in the taco seasoning, corn, black beans, and salsa. Let it simmer for 5 minutes, stirring occasionally.
