Mexican Calabacitas Con Carne Molida En Salsa Verde

Ingredients:
For the Calabacitas:
2 medium zucchinis, sliced
2 medium potatoes, peeled and diced
1 small onion, chopped
2 tbsp vegetable oil
2 cloves garlic, minced
½ cup green salsa (salsa verde)
1 tsp ground cumin
½ tsp chili powder
Salt and pepper, to taste
Fresh cilantro for garnish (optional)
For the Carne Molida (Ground Beef):
1 lb ground beef
1 tbsp vegetable oil
1 tsp ground cumin
½ tsp garlic powder
Salt and pepper, to taste
Instructions:
Cook the Ground Beef:
Heat 1 tbsp vegetable oil in a large skillet over medium heat.
Add the ground beef, breaking it apart while cooking.
Season with cumin, garlic powder, salt, and pepper.
Cook until browned (about 8-10 minutes), then remove from the skillet and set aside.
Sauté the Vegetables:
In the same skillet, heat 2 tbsp vegetable oil.
Add chopped onions and cook until softened (about 3 minutes).
Stir in minced garlic and cook for 1 minute until fragrant.
Add diced potatoes and cook for 5 minutes, stirring occasionally.
Cook the Calabacitas:
Add sliced zucchinis and cook until tender (about 5-7 minutes).
Stir in salsa verde, cumin, chili powder, salt, and pepper.
Combine & Simmer:
Return the cooked ground beef to the skillet.
Stir well and simmer for 5 more minutes to blend the flavors.
Garnish & Serve:
Serve with warm tortillas or fluffy rice for a complete meal!
