    Lightened-Up Cheeseburger Soup

    Lightened-Up Cheeseburger Soup

    Craving a cozy, creamy bowl of cheeseburger soup without the guilt? This Weight Watchers friendly Cheeseburger Soup is packed with flavor, lower in carbs and calories, and perfect for a light weeknight dinner or meal prep! Made with lean ground beef, cauliflower, and a touch of reduced-fat cheddar, this hearty soup satisfies all your comfort food cravings.

    Ingredients:

    1 lb lean ground beef (or ground turkey for a lower-fat option)

    1 medium onion, chopped

    2 cloves garlic, minced

    3 cups low-sodium beef broth

    2 cups cauliflower florets (for a creamy, low-carb base)

    1 cup reduced-fat shredded cheddar cheese

    1/2 cup milk (skim or 2% for a lighter version)

    1 medium potato, peeled and diced

    1 tablespoon Dijon mustard

    1 teaspoon Worcestershire sauce

    Salt and black pepper, to taste

    1/4 cup chopped green onions (for garnish)

    Directions:

    1. Brown the meat: In a large pot or Dutch oven, cook the ground beef over medium heat until browned. Break it apart with a spoon as it cooks. Drain off excess fat for a leaner soup.

    2. Sauté aromatics: Add chopped onion and minced garlic. Cook for 2–3 minutes until the onion softens and becomes translucent.

    3. Add vegetables & flavor: Stir in beef broth, cauliflower, diced potato, Dijon mustard, and Worcestershire sauce. Mix well.

    4. Simmer the soup: Bring the mixture to a boil, then reduce heat to low. Cover and simmer for 20 minutes, or until cauliflower and potatoes are tender.

    5. Blend for creaminess: Use an immersion blender (or regular blender in batches) to puree the soup until creamy. Leave some small chunks for added texture.

    6. Stir in cheese & milk: Return the soup to low heat and stir in milk and shredded cheddar cheese. Cook until the cheese is melted and the soup is creamy and smooth.

    7. Season and serve: Add salt and pepper to taste. Ladle into bowls and garnish with green onions.
