    Lemon Herb Butter Steak with Fluffy Mashed Potatoes

Juicy ribeye steaks are seared to perfection and topped with a zesty lemon herb butter that melts into every bite.     Ingredients:

    For the Steak:
    – 2 ribeye steaks, 1-inch thick
    – Salt and freshly ground black pepper
    – 2 tablespoons olive oil

    For the Lemon Herb Butter:

    – 1/2 cup unsalted butter, softened
    – Zest of 1 lemon
    – 2 tablespoons fresh parsley, chopped
    – 1 tablespoon fresh thyme, chopped
    – 1 garlic clove, minced
    – Salt, to taste

    For the Fluffy Mashed Potatoes:

    – 4 large potatoes, peeled and cubed
    – 1/2 cup milk
    – 1/4 cup unsalted butter
    – Salt and pepper, to taste

    Instructions:

    Make the Lemon Herb Butter:

    1. In a small mixing bowl, combine the softened butter with lemon zest, chopped parsley, thyme, and minced garlic. Add a pinch of salt and mix until everything is well incorporated. Set this aromatic butter mixture aside.

    Cook the Ribeye Steaks:

    1. Season the ribeye steaks generously on both sides with salt and freshly ground black pepper.

    2. Heat olive oil in a hot skillet over medium-high heat. Sear the steaks for 4-5 minutes on each side to achieve a perfect medium-rare, or cook them to your desired level of doneness.

    3. Once cooked, remove the steaks from the skillet and immediately top each with a generous dollop of the lemon herb butter, allowing it to melt and soak into the meat.

    Prepare the Fluffy Mashed Potatoes:

    1. Boil the peeled and cubed potatoes in salted water until they are fork-tender, about 15-20 minutes.

    2. Drain the potatoes well and return them to the pot.

    3. Add milk and unsalted butter to the potatoes, then mash until they are smooth and fluffy. Season with salt and pepper to your taste.

    Serve:

    1. Serve the perfectly cooked lemon herb butter steak alongside a heaping portion of fluffy mashed potatoes. Drizzle any remaining melted butter from the pan over the dish for added richness.
