Lemon Berry Bread

 

INGREDIENTS:

 

 

  • 1/3 cup melted butter
  • 1 cup of sugar
  • 3 tablespoons of lemon juice
  • 2 large eggs, at room temperature
  • 1-1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • salt 1/2 tsp
  • 1/2 cup 2% milk
  • 1 cup of fresh or frozen blueberries
  • 1/2 cup chopped nuts
  • 2 tsp grated lemon peel.

Glaze:

  • 2 tablespoons of lemon juice
  • 1/4 cup of sugar..

 

INSTRUCTIONS:

 

Let’s get started the recipe:

  1. In a large bowl, whisk together the butter, sugar, lemon juice, and eggs. Combine flour with baking powder and salt; Stir in the egg mixture alternating with the milk, beating well after each addition. Add blueberries, nuts, and lemon zest.
  2. Transfer to a greased 8″ x 4″ square. loaf pan. Bake at 350° for 60-70 minutes or until a toothpick inserted in the middle comes out clean. Cool for 10 minutes before removing from pan to a wire rack.
  3. Combine the glaze ingredients. Sprinkle on warm bread.
