    Looking for a bold and mouthwatering twist on taco night? These Korean BBQ Tacos are the ultimate fusion of sweet, spicy, and savory flavors! Tender marinated beef, crisp tangy slaw, and a sticky-sweet soy garlic sauce come together in a soft flour tortilla for the perfect Asian-Mexican fusion dinner. Ideal for weeknight meals, game day gatherings, or anytime you crave something fun and flavorful!

    Ingredients

    For the Korean BBQ Beef Marinade:

    1 lb flank steak or ribeye, thinly sliced (Korean BBQ beef)

    3 tbsp soy sauce

    2 tbsp brown sugar

    2 tbsp sesame oil

    3 garlic cloves, minced

    1 tbsp fresh ginger, grated

    1 tbsp rice vinegar

    1 tsp gochujang (Korean chili paste optional for extra heat)

    For the Crunchy Asian Slaw:

    2 cups shredded cabbage

    1 cup shredded carrots

    ½ cup green onions, chopped

    2 tbsp rice vinegar

    1 tbsp sesame oil

    1 tbsp honey

    Salt and pepper to taste

    To Assemble the Korean Tacos:

    8 small flour tortillas

    2 tbsp sesame seeds (for garnish)

    Fresh cilantro (for garnish)

    Instructions:

    1. Marinate the Korean BBQ Beef:

    In a mixing bowl, whisk together the soy sauce, brown sugar, sesame oil, garlic, ginger, rice vinegar, and gochujang.
    Add the thinly sliced beef and toss well to coat. Cover and marinate for at least 30 minutes (or up to 4 hours for maximum flavor).

    1. Make the Sweet and Tangy Slaw:

    In a large bowl, combine cabbage, carrots, and green onions.
    In a small bowl, whisk together rice vinegar, sesame oil, honey, salt, and pepper.
    Pour the dressing over the slaw and toss until fully coated. Chill until ready to serve.

    1. Cook the Korean-Style Beef:

    Heat a large skillet or grill pan over medium-high heat.
    Add the marinated beef and cook for 3–5 minutes, stirring occasionally, until cooked through and slightly caramelized.

    1. Assemble the Korean Tacos:

    Warm the flour tortillas in a dry skillet or microwave.
    Layer each tortilla with Korean BBQ beef and a generous scoop of slaw.
    Top with sesame seeds and chopped cilantro.

    1. Serve and Enjoy:

    Serve your Korean-inspired tacos hot with a squeeze of lime, and get ready for a flavor explosion!

    Recipe Notes & Tips

    Want it spicier? Add more gochujang or top with sliced jalapeños.
