Keto Stuffed Peppers

Ingredients:
4 large bell peppers (any color)
1 lb ground beef (or ground turkey, chicken)
1 small onion, finely chopped
2 garlic cloves, minced
1 cup cauliflower rice (low-carb substitute for rice)
1 cup shredded cheddar cheese (keto-friendly)
1/2 cup chopped fresh parsley
1 tbsp olive oil
Salt and pepper, to taste
Optional: paprika, cumin, or keto-friendly spices of choice
Instructions:
Preheat oven to 375°F (190°C).
Cut the tops off the bell peppers, remove seeds and membranes, and place in a baking dish.
In a skillet, cook ground beef over medium-high heat until browned. Break meat into small pieces.
Add onion and garlic; sauté until onions are translucent.
Stir in cauliflower rice, shredded cheese, parsley, salt, and pepper. Cook for 2–3 minutes until combined.
Stuff each pepper with the mixture, filling them generously.
Drizzle olive oil over the tops and sprinkle with desired spices.
Cover with foil and bake for 25 minutes.
Remove foil and bake an additional 10–15 minutes until peppers are tender and filling is heated through.
