Made with tender chicken, sharp cheddar cheese, and a touch of cayenne, it’s packed with flavor and easy to prepare. Perfect for busy weeknights or family gatherings, this dish can be made ahead and even frozen for later. Baked until bubbly and golden, it’s a satisfying meal that’s sure to be a hit. Try it tonight for a cozy, crowd-pleasing dinner!

    Ingredients:

    2 cups cooked chicken (shredded)

3 cups dry spaghetti (broken into 2-inch pieces)

2 cans cream of mushroom soup

2 cups sharp cheddar cheese, grated

1/4 cup green bell pepper, finely diced

    1/4 cup onion, finely diced

1 (4-ounce) jar diced pimentos, drained

2 cups chicken broth (reserved from cooking chicken)

    1 teaspoon Lawry’s Seasoned Salt

    1/8–1/4 teaspoon cayenne pepper

    Salt and pepper, to taste

1 cup additional grated sharp cheddar cheese (for topping)

    Directions:

    1. Prepare the Chicken: Start by cooking one cut-up fryer chicken until fully cooked. Once cooled, shred the meat to make about 2 cups.

    2. Cook the Spaghetti: In the same pot, cook the spaghetti in the chicken broth until just al dente (do not overcook).

    3. Mix Ingredients: In a large bowl, combine the cooked chicken, spaghetti, cream of mushroom soup, 2 cups of grated cheddar, green pepper, onion, pimentos, remaining chicken broth, seasoned salt, cayenne, and salt and pepper.

    4. Assemble the Casserole: Transfer the mixture to a casserole dish. Top with the additional 1 cup of sharp cheddar cheese.

    5. Bake and Serve: Bake at 350°F for 45 minutes, until the cheese is melted and bubbly. (Cover with foil if cheese begins to brown too much.)

    Make-Ahead Tips:

Cover and freeze up to 6 months for an easy meal prep.

Refrigerate for up to 2 days if you’re baking it soon.
