    Honey Garlic Chicken Bites Over Creamy Parmesan Rice

    Looking for an easy weeknight dinner idea that’s both comforting and packed with flavor? These Honey Garlic Chicken Bites over Creamy Rice are a quick and delicious meal your whole family will love! Tender bite-sized chicken is pan-seared and coated in a sticky honey garlic glaze, then served over ultra-creamy Parmesan rice for the ultimate satisfying dinner.

     

    Ingredients:

    For the Honey Garlic Chicken:

    1½ lbs boneless, skinless chicken breasts, cut into bite-sized pieces

    2 tbsp olive oil

    Salt & black pepper, to taste

    ½ tsp garlic powder

    5 cloves garlic, minced

    ¼ cup honey

    2 tbsp soy sauce

    1 tbsp apple cider vinegar

    1 tbsp butter

    For the Creamy Parmesan Rice:

    1½ cups jasmine or white rice

    3 cups chicken broth

    1 cup heavy cream

    1 cup shredded mozzarella cheese

    ½ cup softened cream cheese

    ½ cup grated Parmesan cheese

    1 tbsp butter

    Salt & pepper, to taste

    1 tsp Italian seasoning

    Fresh parsley, chopped (for garnish)

     

    Instructions:

    1. Cook the Rice:
    In a medium saucepan, combine rice and chicken broth. Bring to a boil, reduce heat, cover, and simmer for 15 minutes or until the rice is fully cooked and broth is absorbed.

    2. Make it Creamy:
    Stir in butter, heavy cream, cream cheese, shredded mozzarella, and Parmesan cheese. Mix until everything is melted and creamy. Season with salt, pepper, and Italian seasoning. Keep warm.

    3. Cook the Chicken:
    Heat olive oil in a large skillet over medium-high heat. Season the chicken with salt, pepper, and garlic powder. Sauté until golden brown and cooked through (about 12–15 minutes).

    4. Add the Glaze:
    Push chicken to the sides of the skillet. Melt in the butter and sauté minced garlic for 30 seconds until fragrant. Add honey, soy sauce, and apple cider vinegar. Stir well and simmer for 2–3 minutes until the glaze thickens and coats the chicken.

    5. Serve:
    Spoon the creamy rice onto plates and top with the honey garlic chicken bites. Garnish with freshly chopped parsley. Serve hot!
