    Authentic Mexican Flautas Ahogadas with Homemade Salsa Verde

    Crispy Rolled Tacos Drowned in Zesty Green Sauce

     Ingredients

    For the Flautas (Rolled Tacos)

    • 12 corn tortillas
    • 2 cups shredded chicken, beef, or pork

    • 1 tsp cumin

    • 10 tomatillos, husked and rinsed
    • 2 serrano peppers (or jalapeños for milder heat)
    • 2 garlic cloves
    • ½ cup chicken broth
    • ½ tsp cumin
    • ½ tsp salt
    • ¼ cup fresh cilantro
    • Juice of 1 lime

    Toppings

    • Mexican crema or sour cream
    • Queso fresco or cotija cheese, crumbled
    • Pico de gallo
    • Fresh chopped cilantro

    Directions

    Step 1: Make the Salsa Verde

    Roast the tomatillos and peppers in a dry skillet until lightly charred.
    Blend with garlic, chicken broth, cumin, salt, cilantro, and lime juice until smooth.
    Simmer for 5 minutes to deepen the flavor. Set aside warm.

    Step 2: Prepare the Filling

    Combine the shredded meat with garlic powder, onion powder, cumin, paprika, salt, and pepper.
    Mix in cheese if using for extra richness.

    Step 3: Roll & Fry the Flautas

    Warm tortillas until flexible.
    Fill, roll tightly, and secure with toothpicks.
    Fry in hot oil until crispy and golden. Drain on paper towels.

    Step 4: Assemble & Serve

    Generously pour warm salsa verde over the top.
    Finish with crema, queso fresco, pico de gallo, and cilantro.
