Ingredients for this Comfort Food Classic:

1.5 lbs lean ground beef

1 large onion, chopped

3 cloves garlic, minced

2 cups fresh sliced mushrooms

2 cups baby carrots, chopped

1 cup frozen green peas

2 cups diced potatoes

1 can (14 oz) diced tomatoes, with juice

1 cup beef broth

1/2 cup sour cream

1 tablespoon Worcestershire sauce

1 teaspoon dried thyme

1 teaspoon dried rosemary

Salt and pepper, to taste

2 tablespoons olive oil

1 cup shredded cheddar cheese

Fresh parsley, chopped (for garnish)

 

How to Make This Cheesy Ground Beef Casserole:

1. Preheat oven to 375°F (190°C).

2. In a large skillet, heat olive oil over medium heat. Sauté chopped onions and garlic until fragrant and translucent.

3. Add ground beef and cook until fully browned, breaking it apart as it cooks. Drain excess fat.

4. Stir in mushrooms, carrots, diced potatoes, tomatoes (with juice), peas, Worcestershire sauce, thyme, rosemary, salt, and pepper. Cook for about 5 minutes.

5. Pour in beef broth and sour cream. Stir until creamy and well blended.

6. Transfer the mixture into a greased 9×13-inch casserole dish. Top with shredded cheddar cheese.

7. Bake uncovered for 30–35 minutes, or until the cheese is bubbly and golden, and the vegetables are fork-tender.

8. Garnish with chopped parsley before serving.
