Hearty Cabbage and Ground Beef Casserole

Ingredients:
1 lb ground beef (lean for healthier option)
1 small head green cabbage, chopped
1 medium onion, diced
2 cloves garlic, minced
1 can (14.5 oz) diced tomatoes, drained
1 cup cooked white rice (or brown rice for added fiber)
1 cup shredded cheddar cheese
1 tsp smoked paprika
1 tsp dried thyme
½ tsp salt
½ tsp black pepper
2 tbsp olive oil
Instructions:
1. Preheat your oven to 375°F (190°C).
2. In a large skillet, heat olive oil over medium heat. Add ground beef and cook until browned and crumbled (about 7 minutes). Drain any excess fat.
3. Add the diced onion and minced garlic. Cook until softened, around 3 minutes.
4. Stir in chopped cabbage, diced tomatoes, smoked paprika, thyme, salt, and pepper. Let cook for 5–7 minutes until the cabbage softens.
5. Remove from heat and mix in the cooked rice.
6. Pour the mixture into a greased 9×13-inch casserole dish.
7. Sprinkle cheddar cheese evenly on top.
8. Bake for 20–25 minutes, until the cheese is melted and bubbly.
9. Allow to cool slightly before serving.
