Ingredients:

1 lb beef stew meat, cubed

1 tbsp olive oil

1 large onion, chopped

3 cloves garlic, minced

2 carrots, sliced

2 celery stalks, sliced

8 cups beef broth

1 (14.5 oz) can diced tomatoes

1 tsp dried basil

1 tsp dried oregano

1 tsp dried thyme

2 bay leaves

2 cups egg noodles

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Directions:

Brown the Beef: In a large pot or Dutch oven, heat olive oil over medium-high heat. Add cubed beef and sear until browned on all sides. Remove and set aside.

Sauté the Vegetables: In the same pot, cook onion, garlic, carrots, and celery for 5-7 minutes until tender.

Simmer the Soup: Return beef to the pot, then add beef broth, diced tomatoes, basil, oregano, thyme, and bay leaves. Bring to a boil, then reduce heat and simmer for 1 hour until the beef is tender.

Cook the Noodles: Stir in egg noodles and cook for 10-12 minutes until soft.
