Ingredients:

1 lb ground turkey

2 large sweet potatoes, peeled and diced

1 tbsp olive oil

1 medium onion, diced

2 garlic cloves, minced

1 red bell pepper, diced

1 tsp smoked paprika

1/2 tsp ground cumin

1/2 tsp dried thyme

Salt and black pepper, to taste

1 cup shredded mozzarella cheese or cheddar cheese

Fresh parsley or cilantro, chopped, for garnish (optional)

Directions:

Preheat oven to 400°F (200°C). Grease a 9×13-inch baking dish or large oven-safe skillet for this healthy ground turkey bake.

In a skillet over medium heat, heat olive oil. Sauté onion and garlic until softened, about 3-4 minutes. Add ground turkey, cooking until browned and fully cooked, breaking it apart with a spoon.

Add diced sweet potatoes and red bell pepper. Season with smoked paprika, ground cumin, dried thyme, salt, and pepper. Mix well to coat all ingredients evenly.

Transfer the turkey and veggie mixture to the prepared dish. Cover with foil and bake 25-30 minutes until sweet potatoes are tender.

Remove foil and sprinkle shredded cheese over the top. Bake an additional 5-10 minutes until cheese is melted and bubbly for a cheesy ground turkey bake.

Let cool slightly. Garnish with parsley or cilantro if desired. Serve warm as a wholesome and nutritious dinner.
