This Green Salad with Apples and Blue Cheese combines crisp apples, tangy blue cheese, and crunchy pecans for a refreshing and flavorful dish. Perfect for a quick lunch or a healthy side, it’s a delicious way to enjoy fresh ingredients.

Ingredients

Salad Dressing:
– ¼ cup extra virgin olive oil
– 3 tablespoons Dijon mustard
– 2 tablespoons honey
– 1 medium lemon, freshly squeezed (or more, to taste)

Salad Ingredients:
– 6 oz mixed greens
– 1 large red apple (such as Honey Crisp, Fuji, or Gala), cored and sliced
– ½ cup pecans, chopped
– ⅓ cup Blue cheese, crumbled

Instructions

Make the Salad Dressing:
1. Combine all salad dressing ingredients in a mason jar.
2. Whisk well with a fork until emulsified, or close the lid and shake vigorously.
3. Add more lemon juice to taste.

Assemble the Salad:
1. Arrange the mixed greens in individual bowls for a beautiful presentation.
2. Top each bowl with sliced apples, chopped pecans, and crumbled blue cheese.
3. Drizzle with the salad dressing.

Alternative Method:
1. Combine all salad ingredients (except pecans and half of the crumbled blue cheese) in a large serving bowl.
2. Add the dressing and toss to combine.
3. Top the salad with chopped pecans and the remaining crumbled blue cheese.
