    Garlic Parmesan Chicken Meatloaves

    Garlic Parmesan Chicken Meatloaves are a flavorful twist on traditional meatloaf, packed with savory garlic, Parmesan cheese, and Italian herbs. These mini meatloaves are baked to perfection, topped with marinara sauce and melted mozzarella for a cheesy finish. Perfect for busy weeknights, they’re easy to make and versatile to serve with sides like mashed potatoes or roasted veggies. They’re also freezer-friendly, making them a great meal prep option. Enjoy a hearty, family-favorite dinner that’s both delicious and comforting!

    Ingredients:

    1 lb (450g) ground chicken

    1/2 cup grated Parmesan cheese

    1/2 cup breadcrumbs

    2 cloves garlic, minced

    1 egg

    1/4 cup milk

    1 tablespoon fresh parsley, chopped

    1 teaspoon dried oregano

    1 teaspoon onion powder

    Salt and pepper to taste

    1/4 cup marinara sauce (for topping)

    1/4 cup shredded mozzarella cheese (for topping)

    Instructions:

    1. Preheat the oven to 375°F (190°C) and lightly grease a muffin tin or mini loaf pan.

    2. Combine Ingredients: In a large bowl, mix the ground chicken, Parmesan cheese, breadcrumbs, minced garlic, egg, milk, parsley, oregano, onion powder, salt, and pepper until fully combined.

    3. Portion the Mixture: Divide the chicken mixture evenly into the muffin tin or loaf pan, pressing each portion gently into shape.

    4. Bake the Meatloaves: Bake for 20-25 minutes, or until the meatloaves are golden brown and cooked through.

    5. Add Toppings: Remove the pan from the oven, top each meatloaf with marinara sauce, and sprinkle shredded mozzarella over the top.

    6. Melt the Cheese: Return to the oven and bake for another 5 minutes, or until the cheese is melted and bubbly.

    7. Serve & Garnish: Serve warm and garnish with fresh parsley, if desired.

    Notes:

    Substitute ground turkey for chicken if preferred.

    Pair these mini meatloaves with mashed potatoes, roasted vegetables, or a fresh green salad for a complete meal.
