    Garlic Parmesan Chicken Meatloaf

     

    Elevate your dinner game with this Garlic Parmesan Chicken Meatloaf, a savory twist on a classic favorite! Made with tender ground chicken, a gooey mozzarella cheese center, and a golden Parmesan topping, it’s pure comfort food perfection. The optional garlic butter sauce adds an extra layer of indulgence, making every bite irresistible. This easy-to-make dish is perfect for family dinners or special occasions. Serve it with mashed potatoes or a fresh salad for a complete, crowd-pleasing meal!

    Ingredients:

    For the Meatloaf:

    1 ½ lbs ground chicken

    ¾ cup breadcrumbs (plain or Italian-style)

    1 egg, beaten

    1 cup grated Parmesan cheese

    1 tbsp minced garlic

    1 tsp dried parsley

    1 tsp onion powder

    1 tsp salt

    ½ tsp black pepper

    ¼ tsp red pepper flakes (optional)

    ½ cup milk

    1 cup shredded mozzarella cheese (for layering)

    For the Topping:

    ½ cup shredded mozzarella cheese

    ¼ cup grated Parmesan cheese

    1 tbsp chopped fresh parsley (for garnish)

    For Garlic Butter Sauce (Optional):

    2 tbsp unsalted butter

    1 tsp minced garlic

    1 tsp parsley

    ¼ tsp salt

    Instructions:

    1. Preheat the Oven:
    Preheat your oven to 375°F (190°C). Lightly grease a loaf pan or line it with parchment paper for easy cleanup.

    2. Mix the Meatloaf Ingredients:
    In a large bowl, combine ground chicken, breadcrumbs, beaten egg, Parmesan, minced garlic, parsley, onion powder, salt, black pepper, red pepper flakes, and milk. Mix until well-combined but avoid overmixing to keep the meatloaf tender.

    3. Layer the Cheese:
    Spread half of the meat mixture evenly in the loaf pan. Add a layer of shredded mozzarella cheese, then top with the remaining meat mixture, pressing it down gently.

    4. Bake the Meatloaf:
    Bake for 35 minutes. Remove the pan from the oven and sprinkle the mozzarella and Parmesan cheeses over the top. Bake for an additional 10-15 minutes or until the cheese is melted and golden, and the meatloaf’s internal temperature reaches 165°F (74°C).

    5. Prepare the Garlic Butter Sauce (Optional):
    While the meatloaf bakes, melt butter in a small pan over medium heat. Stir in minced garlic, parsley, and salt. Simmer for 1-2 minutes.

    6. Serve and Enjoy:
    Let the meatloaf rest for 5-10 minutes before slicing. Drizzle with garlic butter sauce, garnish with fresh parsley, and serve with creamy mashed potatoes or a crisp green salad for a complete meal.

    Add sautéed mushrooms for extra depth of flavor.
