Ingredients:
1 lb large shrimp, peeled and deveined
12 lasagna noodles, cooked per package instructions
4 tablespoons unsalted butter
4 cloves garlic, minced
1/4 cup white wine or chicken broth
1 lemon, zest and juice
2 cups ricotta cheese
1/2 cup grated Parmesan cheese
2 cups shredded mozzarella cheese
2 cups heavy cream
1 teaspoon Italian seasoning
Salt and pepper, to taste
2 tablespoons fresh parsley, chopped (for garnish)
Instructions:
1. Cook the Lasagna Noodles:
Cook 12 lasagna noodles according to package instructions. Drain and place them flat on a baking sheet to prevent sticking. Set aside.
2. Prepare the Garlic Butter Shrimp:
In a large skillet, melt 4 tablespoons of unsalted butter over medium-high heat. Add 4 cloves of minced garlic and sauté until fragrant (1-2 minutes). Avoid burning the garlic!
Add 1 lb of large shrimp and cook for 2-3 minutes on each side until they turn pink and opaque. Stir in 1/4 cup of white wine or chicken broth, lemon zest, and the juice of 1 lemon. Let simmer for another 2 minutes until the liquid reduces slightly. Remove shrimp from the skillet and set aside.
