Ingredients

For the Garlic Butter Salmon & Shrimp:

2 salmon fillets (6 oz each)

6–8 large shrimp, peeled and deveined

1 tablespoon olive oil

Salt and freshly ground black pepper, to taste

2 tablespoons unsalted butter

3 cloves garlic, minced

1 tablespoon lemon juice

1 teaspoon smoked paprika (optional)

Fresh parsley, chopped (for garnish)

For the Creamy Spinach Mash:

2 cups baby spinach leaves, chopped

1 medium potato, peeled and cubed

2 tablespoons butter

1/4 cup milk or cream

Salt and pepper, to taste

1 tablespoon grated Parmesan cheese (optional)

 

Instructions

1. Make the Spinach Mash:

Boil the cubed potato until fork-tender, about 10–12 minutes.

In a skillet, sauté the spinach with a little butter until wilted.

Mash the cooked potatoes with butter, milk, and Parmesan (if using). Stir in the sautéed spinach, season with salt and pepper, and set aside.

2. Cook the Garlic Butter Salmon:

Season salmon fillets with salt, pepper, and paprika.

Heat olive oil in a pan over medium-high heat. Sear salmon skin-side down for 4–5 minutes, then flip and cook another 3–4 minutes. Remove and set aside.

3. Sauté the Shrimp:

In the same pan, add butter and minced garlic. Cook for 30 seconds until fragrant.

Add shrimp and sauté until pink and opaque, about 2–3 minutes. Add lemon juice and stir.

4. Serve:

Spoon the creamy spinach mash onto plates, top with the garlic butter salmon and shrimp. Drizzle remaining garlic butter sauce over the top. Garnish with fresh parsley.
