Ingredients:
For the Pasta:
12 oz spaghetti
Salt, for boiling water
For the Chicken & Sauce:
1 lb boneless, skinless chicken breasts, sliced into thick strips
2 tbsp olive oil
3 tbsp unsalted butter (divided)
4 cloves garlic, minced
1 ½ tsp Cajun seasoning
½ tsp smoked paprika
Salt and black pepper, to taste
1 cup heavy cream
½ cup whole milk
½ cup chicken broth
3 oz Velveeta cheese, cubed
¾ cup shredded sharp cheddar cheese
½ cup grated Parmesan cheese
1 oz cream cheese (for added smoothness)
½ tsp onion powder
¼ tsp crushed red pepper flakes (optional, for a mild kick)
1 tsp lemon juice (to balance the richness)
Fresh parsley, chopped (for garnish)
Instructions:
Bring a large pot of salted water to a boil. Cook spaghetti according to package instructions until al dente. Drain and set aside.
In a large skillet, heat olive oil and 1 tbsp butter over medium heat. Season chicken with Cajun seasoning, smoked paprika, salt, and pepper. Sear for 4–5 minutes on each side until golden and cooked through. Remove and set aside.
In the same skillet, melt the remaining butter. Add minced garlic and sauté for 1 minute until fragrant. Stir in heavy cream, milk, and chicken broth.
Reduce heat to low and whisk in Velveeta, cheddar, Parmesan, and cream cheese until smooth and creamy. Stir in onion powder, red pepper flakes, and lemon juice.
Add cooked spaghetti and chicken to the sauce, tossing gently to coat. Simmer for 2–3 minutes until the sauce thickens and clings beautifully to the pasta.
Sprinkle with chopped parsley and extra Parmesan before serving. Enjoy hot!
Pro Tips:
Use freshly grated cheese for the smoothest sauce texture.
Add steamed broccoli or spinach for extra color and nutrition.
Swap spaghetti for fettuccine or penne for a fun variation!
