Fresh Lemon Herb Tortellini Salad with Snap Peas
This Lemon Herb Tortellini Salad is a vibrant, refreshing pasta salad bursting with flavor! Ingredients:
For the Salad:
10 oz cheese tortellini (fresh or refrigerated)
1 cup sugar snap peas, trimmed and halved
1/4 cup chopped fresh parsley
1 tbsp chopped fresh dill
1 tbsp chopped fresh basil
1/4 cup grated Parmesan cheese
Salt and pepper, to taste
For the Lemon Herb Dressing:
1/4 cup olive oil
2 tbsp fresh lemon juice
1 tsp lemon zest
1 tsp Dijon mustard
1 clove garlic, minced
Salt and black pepper, to taste
Directions:
1. Cook the tortellini according to package directions. In the last minute of cooking, add snap peas to lightly blanch them.
2. Drain and rinse both tortellini and peas under cold water to stop cooking.
3. In a bowl or jar, whisk together the lemon herb dressing: olive oil, lemon juice, lemon zest, Dijon mustard, garlic, salt, and pepper.
4. In a large mixing bowl, combine the tortellini, snap peas, parsley, dill, basil, and Parmesan cheese.
5. Pour the lemon dressing over the salad and gently toss to coat evenly.
6. Chill in the fridge for 15–20 minutes to enhance flavors.
