French Onion Ground Beef and Rice Casserole

 

A comforting, savory casserole packed with rich French onion flavors, tender beef, and hearty rice!

Ingredients:

1 pound ground beef
1 cup long-grain white rice
1 can (10.5 oz) French onion soup
1 can (14.5 oz) diced tomatoes, undrained
1 cup beef broth
1 medium onion, sliced
2 cloves garlic, minced
1 tablespoon olive oil
1 teaspoon Worcestershire sauce
1/2 teaspoon salt (adjust to taste)
1/2 teaspoon black pepper
1/2 teaspoon dried thyme
1 1/2 cups shredded mozzarella or Swiss cheese
1/2 cup crispy fried onions (for topping)

Instructions:

Preheat & Prepare:
Preheat your oven to 350°F (175°C).
Grease a 9×13-inch baking dish and set it aside.

Cook the Beef & Onions:

Heat olive oil in a large skillet over medium heat.
Add sliced onions and sauté until soft and caramelized (about 5 minutes).
Stir in minced garlic and cook for another 30 seconds.
Add ground beef, breaking it apart, and cook until browned. Drain excess grease if needed.

Mix the Ingredients:

Stir in the Worcestershire sauce, diced tomatoes (with juice), French onion soup, beef broth, rice, salt, pepper, and thyme.

Assemble & Bake:

Transfer the mixture into the prepared baking dish.
Cover tightly with foil and bake for 35-40 minutes, or until the rice is tender.

Add the Cheese & Topping:

Remove foil, sprinkle shredded cheese over the casserole, and top with crispy fried onions.
Return to the oven and bake uncovered for an additional 5-10 minutes, until the cheese melts and turns golden.

Serve & Enjoy:

Let it rest for 5 minutes before serving.
Garnish with fresh parsley if desired.

Pro Tip: For extra richness, stir in 1/4 cup sour cream before serving!
