    French Onion Beef & Rice Muffin Cups

     

    French Onion Beef & Rice Muffin Cups

     

    Indulge in these flavor-packed French Onion Beef & Rice Muffin Cups, featuring caramelized onions, juicy ground beef, and melty Swiss cheese nestled in a flaky biscuit crust. Perfect for appetizers, party snacks, or an easy family dinner!

    Ingredients:

    1 lb ground beef

    1 large onion, thinly sliced

    2 tbsp butter

    1 cup cooked rice

    1 cup beef broth

    1 tsp Worcestershire sauce

    1 tsp garlic powder

    1 tsp dried thyme

    Salt & pepper to taste

    1 cup shredded Swiss cheese

    1/4 cup fresh parsley, chopped

    1 package (12-count) refrigerated biscuit dough

    Instructions:

    Preheat & Prep: Preheat your oven to 375°F (190°C). Grease a muffin tin with cooking spray or butter.
    Caramelize Onions: Melt butter in a skillet over medium heat. Add sliced onions and cook for 15-20 minutes, stirring occasionally, until golden brown. Set aside.
    Cook Beef Mixture: In the same skillet, brown ground beef until fully cooked. Drain excess fat. Stir in rice, beef broth, Worcestershire sauce, garlic powder, thyme, salt, and pepper. Cook for 5 more minutes, then fold in caramelized onions and half of the Swiss cheese.
    Assemble Muffin Cups: Roll out the biscuit dough, cutting each biscuit in half. Press halves into muffin tin cups, forming a crust.
    Fill & Bake: Spoon the beef-onion mixture into each biscuit cup, then top with the remaining Swiss cheese.
    Bake to Perfection: Bake for 20-25 minutes until golden brown and cheese is bubbly. Let cool slightly, then garnish with fresh parsley.

    Serving Tips:

    Pair with a side of French onion soup for a cozy meal.
    Add a drizzle of garlic butter for extra richness.
