Ingredients:
1 cup chickpea flour (120g) High in protein and gluten-free!
1 cup water (240ml) For the perfect batter consistency.
1/4 cup chopped fresh herbs (rosemary, thyme, oregano) (10g) Adds a fragrant touch.
2 tablespoons olive oil (30ml) For a rich, smooth texture.
1 teaspoon baking powder Helps the rolls rise beautifully.
1/2 teaspoon garlic powder Adds a subtle, savory kick.
1/2 teaspoon salt Enhances the overall flavor.
1/4 teaspoon black pepper For a hint of spice.
Directions:
1. Preheat oven to 400°F (200°C). Grease a muffin tin or line with muffin liners.
2. In a large bowl, whisk together chickpea flour, baking powder, garlic powder, salt, and pepper.
3. Gradually whisk in water until smooth. Stir in olive oil and chopped herbs.
4. Pour batter into the prepared muffin tin, filling each cup about 2/3 full.
5. Bake for 20-25 minutes until golden brown and a toothpick inserted into the center comes out clean.
6. Let cool in the muffin tin for a few minutes before transferring to a wire rack to cool completely.
