    Easy Zucchini and Tomato Frittata Recipe

    Perfect for brunch, lunch, or a light vegetarian dinner, this Zucchini and Tomato Frittata is soft, flavorful, and ready in under 30 minutes! It combines the mild sweetness of zucchini, the tanginess of fresh tomatoes, and the fluffiness of eggs in one irresistible dish.

     

    Ingredients (Serves 4):

    6 large eggs

    1 medium zucchini, sliced into half-moons

    1 ripe tomato, sliced into rounds

    1 small onion, finely chopped (optional)

    2 tablespoons olive oil

    50g grated cheese (Emmental, Parmesan, or Feta work great)

    2 tablespoons milk or light cream

    Salt and pepper, to taste

    Fresh herbs (parsley, basil, or chives), for garnish

     

    Instructions:

    1. Preheat your oven to 180°C (350°F) if finishing the frittata in the oven.

    2. In a non-stick skillet, heat olive oil over medium heat. Add chopped onion (if using) and zucchini slices. Sauté for 5–7 minutes until soft. Add tomato slices and cook 2 minutes more.

    3. In a bowl, whisk the eggs with milk or cream. Season with salt, pepper, and your favorite herbs. Stir in the grated cheese.

    4. Pour the egg mixture into the skillet over the sautéed vegetables. Let it cook gently for 5–6 minutes without stirring, until the edges begin to set.

    5. To finish cooking:

    In the oven: Place the oven-safe skillet in the center of the oven and bake for 8–10 minutes, until the frittata is golden and fully set.

    On the stovetop: Cover with a lid and cook on low heat until the center is cooked through.

     

    6. Garnish with fresh herbs and serve warm or at room temperature.
