2 tbsp cornstarch
1/3 cup cold water (adjust for desired consistency)
1 egg
1 tsp garlic powder
Salt and pepper (to taste)
6-8 boneless chicken thighs (cut into bite-sized pieces)
Oil for frying
For the Orange Sauce:
Juice from 2 fresh oranges
Zest of 1 orange
5 tbsp sugar
5 tbsp soy sauce
1 tbsp rice vinegar
1 tbsp cornstarch (mixed with 4 tbsp cold water)
1 tsp grated ginger
1 clove garlic, minced
Instructions:
1. Prepare the Batter: In a large bowl, whisk together flour, cornstarch, salt, pepper, garlic powder, and cold water until smooth. Adjust consistency by adding water slowly if needed.
2. Coat the Chicken: Add the chicken pieces to the batter, ensuring they’re evenly coated.
3. Fry the Chicken: Heat oil to 350°F (175°C). Fry chicken pieces in batches until golden brown and cooked through (internal temperature should reach 165°F). Drain on paper towels.
4. Make the Orange Sauce: In a saucepan over medium heat, combine orange juice, zest, sugar, soy sauce, rice vinegar, ginger, and garlic. Stir in the cornstarch mixture and cook until the sauce thickens.
5. Toss and Serve: Add fried chicken to the sauce, tossing until evenly coated. Serve hot over steamed rice or noodles.
Pro Tip: For extra crispiness, fry the chicken a second time!
