    Crockpot Chicken Sausage & Rice Recipe

     

    This Crockpot Chicken, Sausage, & Rice recipe is the perfect one-pot comfort meal. With tender chicken, smoky sausage, and flavorful rice, it’s an easy slow cooker dinner that brings big flavor with minimal effort. The combination of savory spices, tomatoes with green chilies, and a creamy base creates a rich, hearty dish. Ideal for busy weeknights, this recipe lets you set it and forget it. Garnish with fresh parsley or green onions for a delicious, family-friendly meal.

    Ingredients:

    4 boneless, skinless chicken thighs (or breasts)

    8 oz (225g) smoked sausage (Andouille or kielbasa), sliced into rounds

    1 cup long-grain white rice (uncooked)

    1 small onion, diced

    3 cloves garlic, minced

    1 (10.5 oz) can cream of chicken soup

    1 (14.5 oz) can diced tomatoes with green chilies (Rotel)

    2 cups low-sodium chicken broth

    1 teaspoon paprika

    1 teaspoon dried thyme

    1 teaspoon dried oregano

    1/2 teaspoon cayenne pepper (optional for extra heat)

    Salt and black pepper, to taste

    1/2 cup frozen peas (optional)

    Fresh parsley or green onions, chopped (for garnish)

    Instructions:

    1. Prepare the Crockpot:

    Lightly grease your crockpot with cooking spray or use a liner for easy cleanup.

    2. Layer the Ingredients:

    Add 1 cup of uncooked long-grain white rice to the bottom of the crockpot.

    Top with diced onion, minced garlic, and smoked sausage slices.

    Place chicken thighs or breasts over the sausage and rice mixture.

    3. Season & Add Liquids:

    Season with paprika, thyme, oregano, cayenne (optional), salt, and pepper.

    Pour the cream of chicken soup, diced tomatoes with green chilies, and chicken broth evenly over the ingredients.

    4. Cook:

    Cover and cook on Low for 4-6 hours or High for 2-3 hours until the chicken is tender and fully cooked, and the rice absorbs the liquids.

    5. Add Frozen Peas:

    Stir in frozen peas during the last 30 minutes of cooking for added flavor and color.

    6. Shred or Leave Whole:

    Once cooked, shred the chicken with two forks or leave it whole. Stir the mixture gently to combine.

    7. Serve & Garnish:

    Garnish with freshly chopped parsley or green onions for a burst of freshness.
