    Crockpot Cheesy Chicken & Veggie Rice

    The Ultimate Comfort-Food Slow Cooker Dinner Everyone Will Love!
    Warm, creamy, and loaded with tender chicken, fluffy rice, and colorful veggies this Crockpot Cheesy Chicken & Veggie Rice is the perfect family-friendly meal. It’s rich, satisfying, and practically cooks itself while you go about your day. The gooey cheddar and Parmesan make every bite irresistible!

    Ingredients:

    Base:
    1 ½ lbs boneless, skinless chicken breasts or thighs (left whole or cut into chunks)
    1 cup long-grain white rice (rinsed well)
    4 ½ cups low-sodium chicken broth
    1 small onion, finely diced
    1 tablespoon olive oil or butter
    Vegetables:
    2 cups frozen mixed vegetables (peas, carrots, corn, green beans)
    1 cup diced bell peppers (any color optional for extra flavor)
    Seasoning:
    1 teaspoon garlic powder
    1 teaspoon onion powder
    ½ teaspoon dried thyme
    ½ teaspoon smoked paprika (optional for depth)
    Salt and black pepper, to taste
    Creamy & Cheesy Mix:
    ½ cup milk or heavy cream
    1 ½ cups shredded sharp cheddar cheese (plus extra for topping)
    ½ cup grated Parmesan cheese
    ½ cup plain Greek yogurt or sour cream (for that luscious creaminess)
    For Garnish:
    Fresh parsley or chives
    Extra cheddar cheese

    Directions:

    Season the Chicken:
    Add chicken to the crockpot. Drizzle with olive oil or butter and sprinkle with salt, pepper, garlic powder, onion powder, thyme, and smoked paprika.
    Add Rice & Broth:
    Pour rinsed rice over the chicken, then add diced onion and chicken broth. Stir gently to mix.
    Add Vegetables:
    Layer frozen mixed vegetables and bell peppers (if using) on top. Do not stir — this helps the rice cook evenly.
    Cook:
    Cover and cook on Low for 6–7 hours or High for 3–4 hours, until the chicken is tender and the rice is soft.
    Make it Creamy & Cheesy:
    Shred the cooked chicken in the crockpot with two forks. Stir in milk or cream, cheddar, Parmesan, and yogurt or sour cream. Mix until smooth and creamy.
    Garnish & Serve:
    Sprinkle with extra cheese and garnish with fresh parsley or chives. Serve warm and enjoy the creamy, cheesy goodness!
