    Crockpot Cajun Pepper Jack Chicken & Sausage Pasta

    A rich, creamy, and spicy Cajun chicken pasta recipe made easy in the slow cooker! Tender chicken, smoky sausage, and colorful bell peppers come together with pasta, cream, and melty Pepper Jack cheese for the ultimate comfort food dinner. Perfect for busy weeknights or when you’re craving spicy one-pot meals.

    Ingredients:

    Proteins
    1 lb boneless, skinless chicken breasts, diced
    12 oz smoked sausage (Andouille or Kielbasa), sliced
    Pasta
    12 oz penne or rotini pasta (uncooked)
    Vegetables
    1 red bell pepper, sliced
    1 green bell pepper, sliced
    1 yellow bell pepper, sliced
    2 stalks celery, diced
    1 small onion, diced
    3 cloves garlic, minced
    Liquids & Base
    2 cups chicken broth
    1 cup heavy cream
    Cheeses
    1 ½ cups shredded Pepper Jack cheese
    ½ cup grated Parmesan cheese
    Seasonings
    1 ½ tbsp Cajun seasoning (store-bought or homemade)
    ½ tsp smoked paprika (optional)
    Salt and black pepper, to taste
    Pinch of red pepper flakes (optional, for extra heat)
    Garnish
    Fresh parsley or green onions, chopped

    Directions:

    Prepare the base Add diced chicken breasts and sliced sausage to your crockpot.
    Add vegetables Layer in the bell peppers, celery, onion, and garlic.
    Pour liquids Add chicken broth and heavy cream. Stir gently.
    Season generously Mix in Cajun seasoning, paprika, salt, pepper, and red pepper flakes.
    Cook low and slow Cover and cook on low 6-7 hours or high 3-4 hours until chicken is tender.
    Add pasta About 30 minutes before serving, stir in the uncooked pasta. Add more broth if needed.
    Make it creamy Stir in Pepper Jack and Parmesan cheese until melted.
    Serve hot Garnish with parsley or green onions.
