Crockpot Butternut Squash & Chicken Soup with Orzo and Spinach

This Crockpot Butternut Squash & Chicken Soup blends tender chicken, sweet butternut squash, velvety orzo, and fresh spinach in a creamy, herb-infused broth. Perfect for cold-weather comfort meals, healthy weeknight dinners, or cozy family gatherings it’s nourishing, filling, and absolutely delicious!
Ingredients:
1½ lbs boneless, skinless chicken breasts or thighs (left whole or diced)
4 cups butternut squash, peeled and cubed
1 small yellow onion, diced
3 cloves garlic, minced
4 cups low-sodium chicken broth
1 cup heavy cream (or half-and-half for a lighter option)
¾ cup uncooked orzo pasta
2 cups fresh baby spinach leaves
½ tsp dried thyme
½ tsp dried sage
½ tsp paprika
Salt and black pepper to taste
(Optional) Pinch of red pepper flakes for gentle heat
Garnish:
Freshly grated Parmesan cheese
Chopped parsley or basil for serving
Instructions:
Layer the Ingredients: Add chicken, butternut squash, onion, and garlic into your slow cooker.
Add Seasonings & Broth: Pour in the chicken broth and stir in thyme, sage, paprika, salt, and pepper.
Sprinkle in red pepper flakes if you like a little spice.
Slow Cook: Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until chicken is tender and squash is soft.
Shred Chicken: Remove chicken, shred it with two forks, and return it to the crockpot.
Cream & Orzo: Stir in the heavy cream and uncooked orzo. Cook on HIGH for 20–30 minutes until the orzo is tender.
Add Spinach: Stir in fresh spinach just before serving, letting it wilt into the soup.
