Make Buffalo chicken tortellini soup in your crockpot for a creamy, cheesy, and spicy chicken soup that’s perfect for weeknight easy dinners and comfort food cravings. This hearty Buffalo chicken soup is loaded with tender shredded chicken, cheese tortellini, and a kick of Buffalo wing sauce.

Ingredients:

2 boneless, skinless chicken breasts
1 medium onion, chopped
1 can (10 oz) Buffalo wing sauce
1 can (10 oz) cream of chicken soup
1 cup chicken broth
1 cup shredded cheddar cheese
½ cup sour cream
12 oz cheese tortellini (refrigerated or frozen)
Salt and pepper, to taste
Crumbled blue cheese and chopped cilantro (optional, for garnish)

Directions:

Place chicken breasts in the crockpot. Season with salt and pepper.

Add chopped onion, Buffalo wing sauce, cream of chicken soup, and chicken broth. Stir gently to combine.

Cover and cook on low for 6–7 hours or high for 3–4 hours, until the chicken is tender and cooked through.

Remove chicken from the crockpot and shred with two forks. Return shredded chicken to the soup.

Stir in shredded cheddar cheese, sour cream, and cheese tortellini. Cover and cook on high for 20–30 minutes until the tortellini is tender and the soup is creamy.

Top your Buffalo chicken tortellini soup with crumbled blue cheese and chopped cilantro if desired. Serve hot for a cheesy, spicy, and comforting soup.
