    Crispy Rice Paper Samosas with Whipped Pistachio-Feta Filling

     

    Looking for a fun and unique gluten-free appetizer that’s bursting with flavor and perfect for dipping? These Crispy Rice Paper Samosas are a creative spin on traditional samosas made with light rice paper wrappers and filled with a luscious whipped pistachio-feta cheese blend! They’re pan-fried until golden brown and crisp, then served with your choice of dipping sauce or a sweet-hot honey drizzle for that perfect finish.

     

    Ingredients

    For the Whipped Pistachio-Feta Filling:

    100g feta cheese, crumbled

    3 tbsp shelled pistachios, toasted

    3 tbsp Greek yogurt (adds creaminess and protein)

    1 tsp lemon zest

    1 tbsp lemon juice (for brightness)

    ½ garlic clove, grated

    1 tbsp olive oil

    Handful fresh mint or parsley (optional for freshness)

    For the Gluten-Free Wrapper:

    6 rice paper sheets (gluten-free alternative to samosa dough)

    Neutral oil (avocado or sunflower oil) for pan-frying

    Optional Garnish & Dips:

    Hot honey or regular honey drizzle

    Extra crushed pistachios for crunch

    Yogurt lemon dip or spicy harissa for serving

     

    Instructions:

    1. In a food processor, blend feta cheese, toasted pistachios, Greek yogurt, lemon zest, lemon juice, garlic, and olive oil until smooth and creamy. Add herbs if using. The texture should be thick but spreadable.

    2. Dip each rice paper sheet in warm water for 5–10 seconds until soft. Lay on a damp surface or towel to work with.

    3. Spoon 1–1½ tablespoons of the pistachio-feta mixture near the bottom edge of the rice paper. Fold the wrapper into a triangle (like a classic samosa), ensuring it’s sealed tightly. Repeat with all sheets.

    4. Heat 1–2 tablespoons of neutral oil in a non-stick skillet over medium-high heat. Fry each samosa 2–3 minutes per side until golden, crispy, and blistered.

    5. Drizzle with hot honey, sprinkle with crushed pistachios, and serve with a tangy yogurt dip or spicy harissa.
