For the Chicken Tenders:
1 ½ lbs chicken tenders
1 cup plain Greek yogurt
2 tablespoons fresh lemon juice
1 tablespoon extra virgin olive oil
3 garlic cloves, minced
For the Crispy Coating (Optional for Extra Crispiness):
1 cup panko breadcrumbs
½ teaspoon dried oregano
½ teaspoon smoked paprika
¼ teaspoon sea salt
¼ teaspoon black pepper
Instructions:
1. Marinate the Chicken:
In a large mixing bowl, combine Greek yogurt, lemon juice, olive oil, and minced garlic. Mix well.
Add the chicken tenders, making sure they are fully coated in the marinade.
Cover and refrigerate for at least 30 minutes, or overnight for best flavor.
2. Prepare the Crispy Coating:
In a shallow dish, mix together the panko breadcrumbs, dried oregano, smoked paprika, salt, and black pepper.
3. Coat the Chicken:
Remove chicken from the marinade, letting any excess drip off.
Dredge each chicken tender in the breadcrumb mixture, pressing gently to fully coat.
4. Bake:
Preheat oven to 400°F (200°C).
Place the coated chicken tenders on a baking sheet lined with parchment paper.
