Crispy Fried Potatoes with Saucy Beef Stir-Fry

Ingredients:
For the Potatoes:
3 medium potatoes, peeled and sliced into thick rounds
1 tbsp olive oil
1/2 tsp salt
1/2 tsp black pepper
1/2 tsp garlic powder
Vegetable oil (for frying)
For the Beef Stir-Fry:
1 lb beef sirloin or flank steak, sliced into thin strips
1 tbsp soy sauce
1 tsp cornstarch
1/2 tsp black pepper
1 tbsp vegetable oil
1/2 red bell pepper, sliced
1/2 green bell pepper, sliced
1 small onion, chopped
2 cloves garlic, minced
1 green chili, sliced (optional for spice)
2 tbsp soy sauce
1 tbsp oyster sauce
1 tbsp hoisin sauce (optional for sweetness)
1/2 tsp sugar
1/4 cup beef broth or water
1 tsp cornstarch (mixed with 1 tbsp water for thickening)
Instructions:
1. Prepare the Potatoes:
1. Boil the potato slices in salted water for about 5 minutes. Drain and pat dry.
2. Heat vegetable oil in a pan over medium-high heat. Fry the potatoes until golden and crispy, about 4-5 minutes on each side.
3. Drain on paper towels and season with salt, black pepper, and garlic powder.
2. Marinate & Sear the Beef:
1. In a bowl, combine beef with soy sauce, cornstarch, and black pepper.
2. Heat vegetable oil in a pan over high heat. Sear the beef for 2-3 minutes until browned. Remove and set aside.
3. Sauté the Vegetables:
1. In the same pan, add garlic, onion, and green chili. Stir-fry for 1-2 minutes until fragrant.
2. Add red and green bell peppers and cook for another 2 minutes until crisp-tender.
4. Make the Sauce & Combine:
1. In a small bowl, mix soy sauce, oyster sauce, hoisin sauce, sugar, and beef broth.
2. Pour the sauce into the pan and stir in the cornstarch slurry.
3. Return the beef to the pan and toss until everything is coated and glossy (about 1-2 minutes).
5. Assemble & Serve:
Plate the crispy fried potatoes alongside the saucy beef stir-fry.
Garnish with chopped green onions or sesame seeds if desired. Enjoy!
