    Crispy Baked Zucchini Parmesan Crisps

     

    These Zucchini Parmesan Crisps are a crunchy, flavorful snack or appetizer, perfect for any occasion. Thin zucchini slices are coated in a seasoned mix of Parmesan cheese and breadcrumbs, then baked to golden perfection. This easy, healthy recipe is a great alternative to traditional fried snacks. With minimal prep and simple ingredients, you can whip up a batch in just 25 minutes. Serve them with your favorite dip for a delicious, guilt-free treat!

    Ingredients:

    2 medium zucchinis (fresh and thinly sliced)

    1 cup grated Parmesan cheese

    1 cup whole wheat breadcrumbs (for a healthier crunch)

    1 teaspoon garlic powder

    1 teaspoon onion powder

    1 teaspoon dried oregano

    1/2 teaspoon salt

    1/4 teaspoon black pepper

    2 large eggs (for coating)

    Olive oil spray (or a small amount of olive oil for brushing)

    Fresh parsley for garnish (optional)

    Instructions:

    1. Preheat the Oven:

    Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper for easy cleanup.

    2. Prepare the Zucchini:

    Wash 2 fresh zucchinis and slice them into thin rounds, about 1/4 inch thick. Pat them dry with a paper towel to remove excess moisture. This step ensures maximum crispiness!

    3. Make the Parmesan Coating:

    In a shallow bowl, mix 1 cup Parmesan cheese, 1 cup breadcrumbs, garlic powder, onion powder, dried oregano, salt, and black pepper. This breadcrumb-Parmesan mixture will give the zucchini a perfect golden crust.

    4. Egg Wash:

    In another bowl, beat the 2 large eggs. This will help the coating stick to the zucchini.

    5. Coat the Zucchini Slices:

    Dip each zucchini slice into the egg wash and let any excess drip off.

    Then, press each slice into the breadcrumb mixture, ensuring it’s fully coated. Place the slices on the prepared baking sheet.

    6. Bake to Crispy Perfection:
