    Creamy Tuscan Chicken Bake Recipe

    Looking for an easy and flavorful chicken dinner that feels gourmet but is super simple to make? This Creamy Tuscan Chicken Bake is a one-pan meal packed with juicy chicken breasts, sun-dried tomatoes, garlic, spinach, and a rich, creamy Parmesan sauce. It’s the ultimate Mediterranean chicken recipe perfect for busy weeknights or cozy weekend dinners!

    Ingredients:

    4 boneless, skinless chicken breasts

    2 tbsp olive oil

    1 cup sun-dried tomatoes (in oil), drained & chopped

    2 cups fresh spinach, chopped

    3 cloves garlic, minced

    1 cup heavy cream

    ½ cup chicken broth

    1 tsp Italian seasoning

    1 tsp salt

    ½ tsp black pepper

    1 cup grated Parmesan cheese

    ½ cup shredded mozzarella cheese

    Fresh basil, chopped (for garnish)

    Instructions:

    1. Preheat Oven
    Set your oven to 375°F (190°C). Lightly grease a baking dish with olive oil or non-stick spray.

    2. Sear Chicken Breasts
    In a large skillet, heat 1 tbsp olive oil over medium-high heat. Season the chicken breasts with salt, pepper, and Italian seasoning. Sear for 3–4 minutes on each side until golden brown. Remove and set aside.

    3. Make the Creamy Tuscan Sauce
    In the same skillet, add the remaining olive oil and sauté garlic until fragrant (1–2 minutes).
    Add chopped sun-dried tomatoes and spinach, cooking until the spinach wilts (2–3 minutes).
    Pour in the heavy cream and chicken broth. Stir and simmer for 2–3 minutes to thicken.

    4. Assemble & Bake
    Place the seared chicken back into the skillet. Spoon the creamy Tuscan sauce and veggies over the top.
    Sprinkle with Parmesan and mozzarella cheese.
    Transfer to the oven and bake for 20–25 minutes, or until chicken is fully cooked (internal temp: 165°F / 74°C).

    5. Garnish & Serve
    Top with fresh chopped basil and serve warm. This dish pairs beautifully with pasta, rice, or roasted vegetables!
