    Ingredients:

    4 chicken thighs (skin-on, bone-in)

    1 tbsp olive oil

    1 tbsp unsalted butter

    1 onion, thinly sliced

    2 cloves garlic, minced

    1 cup mushrooms, sliced (button or cremini)

    1/2 cup chicken broth

    1 cup heavy cream

    Salt and freshly ground black pepper, to taste

    Fresh parsley, chopped (for garnish)

    Instructions:

    1. Prepare the Chicken:
    Season the chicken thighs generously with salt and freshly ground black pepper.

    2. Sear the Chicken:
    Heat olive oil in a large skillet over medium-high heat. Place chicken thighs skin-side down and sear until golden brown, about 5 minutes per side. Remove chicken and set aside.

    3. Sauté the Veggies:
    In the same skillet, melt the butter. Add sliced onions and mushrooms, cooking until onions are soft and mushrooms are lightly browned.

    4. Make the Creamy Sauce:
    Add minced garlic to the skillet and sauté for 1 minute, until fragrant. Pour in the chicken broth, scraping up any browned bits from the pan. Stir in heavy cream and simmer gently, allowing the sauce to thicken slightly.

    5. Combine and Cook:
    Return the seared chicken thighs to the skillet, skin-side up. Reduce heat to low, cover, and let simmer for about 15 minutes, or until the chicken is cooked through and tender.

    6. Garnish and Serve:
    Sprinkle with freshly chopped parsley before serving. Serve over creamy mashed potatoes, buttered noodles, or steamed rice for a complete meal.
